Cream Puffs

Light and airy buttery cream puffs with three different flavor surprises inside! Easy to make and serve as the perfect little treats for parties.


Ingredients

For the pastry:

Milk – 1/2 cup

Unsalted butter – 1/2 cup

Water – 1/2 cup

White granulated sugar – 1 tsp

Salt – 1/4 tsp

All purpose flour – 1 cup

Eggs – 4 large

For the whipped cream:

Heavy whipping cream – 2 cups

White granulated sugar – 4 tbsp

Vanilla – 1 tsp

For filling:

Strawberries – 8 oz

Chocolate chips – 1 cup

Peaches – 8 oz

Instructions

1. To create the pastry batter, place half a cup of water, half a cup of milk, 8 tbsp of unsalted butter, 1 tsp of white granulated sugar and a quarter tsp of salt in a pan over stove on medium heat. Once the mixture starts to boil, remove from heat and add one cup of all purpose flour. Place back on medium heat for about two mins or until the excess moisture has evaporated and a thin layer of the mixture starts to stick to the bottom of the pan.

2. Beat the mixture using a mixer in a large bowl to help cool it down. Then add four eggs at room temperature, one at a time and wait for each egg to incorporate into the mixture before adding another egg.

3. Once all the eggs have been added to the mixture, scoop your batter into a piping bag fitted with a half inch tip. Place parchment paper over a baking 15 inch baking tray or any size that is available to you. Squeeze the mixture onto the tray creating puffs one and a half inches in diameter and height. Keep at least one inch space between the puffs to give them space to expand. Make sure to smooth out any peaks on the puffs by wetting your fingertips with water and then coat the puffs with egg wash.

4. Preheat your oven to 425 F and bake for about 10 minutes. Then reduce the temperature to 325 F and bake for additional 22 minutes uninterrupted.

5. To create the whipped cream, add two cups of cold heavy whipping cream into a large bowl and add four tbsp of white granulated sugar and one tsp of vanilla extract. Beat using a mixer at medium high speed until the mixture turns fluffy with stiff peaks forming. Insert the whipped cream into a piping bag and fit with a star tip.

6. Dice eight ounces of strawberries and peaches for the filling and heat one cup of chocolate chips at 20 second intervals using a microwave oven to melt the chips.

7. Once the puffs are ready, let them cool fully before inserting the filling. Cut the puffs into halves and squeeze the cream in a circular motion, be generous with the cream. Fill the center of each puff with either strawberries, peaches or chocolate or a combination of the three and enjoy!
