Scalloped Potato Roll
Cheesy baked scalloped potato roll with minced beef and creamy spinach filling. A winner at dinner parties!
Ingredients
White large potatoes – 5 pcs
Parmesan cheese – 4 cups
Salt – 1/2 tsp
Shredded cheddar and jack – 2 cups
For the beef filling:
Minced beef – 1 pound
Tomatoes – 2 1/2 medium sized
White large onion – 1 pc
Parsley chopped – 3 tbsp
Paprika – 1 tsp
Salt – 1 tsp
Pepper – 1/2 tsp
For the spinach filling:
Spinach – 10 cups
Garlic cloves – 3 pcs
Salt – 1 tsp
Sour cream – 1 2/3 cup
Instructions
1. Cut potatoes into thin even slices to form the scalloped potato base.
2. Preheat oven to 350 F. Use two large trays of size 10 inch x 15 inch covered with baking sheet and spread one cup of Parmesan cheese to cover the entire tray.
3. Place the potato slices slightly overlapping one another. Spread one cup of Parmesan cheese on top of the potatoes and sprinkle 1/2 tsp of salt. Create two trays in similar fashion and bake at 350 F for 30 minutes.
4. Finely chop one large white onion,two and a half medium sized tomatoes, and fresh parsley. Place a large pan over medium high heat and add two tablespoons of oil.
5. Once the oil is hot, add the onions and fry until golden brown. Add one pound of minced beef and cook for 3 – 4 minutes. Add the tomatoes and parsley and continue cooking. Add one tsp of paprika, one tsp of salt and half tsp of pepper and mix. You can add a dash of red chili powder for extra spice. Cook until the beef is fully cooked through and set aside.
6. In another pan, add three tablespoons of oil and add ten cups of spinach. Add one tsp of salt and three pieces of garlic cloves finely chopped. Once the spinach is fully cooked, remove from heat.
7. Mix cooked spinach with one and two-thirds of a cup of sour cream until blended. You can use ricotta cheese instead of sour cream.

8. Once the scallop potatoes are baked, add a layer of spinach filling evenly over the potatoes.

9. Then add the minced beef filling over the spinach layer.

10. Add one cup of shredded cheddar and jack cheese over the minced beef filling.

11. Fold the layers into a roll using the baking sheet.

12. Remove sheet and bake the resulting rolls in oven at 350 F for 15 minutes.

13. Take the rolls out of the oven and they are ready to be served!
